Honeycomb Cupcakes

I recently visited Waitrose and spotted in the baking section some little pots of honeycomb, and had a brain wave to make honeycomb cupcakes.


I used a basic chocolate cupcake mix as detailed in previous blog posts.
I then found a recipe for malted chocolate butter cream which used horlicks, and it tasted delicious. I put all the ingredient below in a mixer and whizzed until smooth and fluffy and then piped onto the cakes.

250g icing sugar
1 teaspoon cocoa powder
45g horlicks
125g unsalted butter
2 tablespoons boiling water


The cupcakes were such a success I had to make more the next day!! However the next time I made them we had run out of cocoa powder so I used hot chocolate instead, and I think i preferred them made with hot chocolate as the cakes seemed lighter and fluffier and so did the icing.

Waitrose No Bake Raspberry Cheesecakes

I love going to Waitrose and picking out the recipe cards and getting some inspiration from them, so when I popped into my local Waitrose with my mum we saw these and decided to bake them as soon as we got home.




They are the most simple and quick desserts to make, but taste delicious. Most of the ingredients are from the essential range as well, which makes them relatively cheap too!

The recipe can be found here, however I will give a quick summary below:

The recipe says to crush 6 essential Waitrose Rich Highland Shortie Biscuits, however I wanted to be generous with the biscuits so ended up crushing about 20!! I then crushed the biscuits and divided between 5 tumblers (there are 5 people in my family, the recipe serves 4!). Then you mix 250g of Waitrose Lighter Soft Cheese, with 100g essential Waitrose Greek Style Yoghurt (I did about 150g in the end) and 2tbsp pure clear honey. These go in the fridge whilst the 200g frozen essential Waitrose Raspberries thaw with 2tbsp cordial (I used summer fruits cordial as that was in the cupboard but the recipe recommends blackcurrant cordial or squash). Once ready to eat, divide the thawed raspberries between the beakers and layer on top.



I really loved this as a dessert and will most definitely be serving it in the summer as it is a very summery pudding!

Rachel Reviews: Jus Rol Cinnamon Swirls

I spotted these in the supermarket today and HAD to buy them. When in America me and my friend baked in our hostel these cinnamon rolls and cookies. The dough was already made and all you had to do was cut up, place on a baking tray and cook in the oven. We have both been very sad that the UK do not sell anything like this.




However, now we can get a very similar alternative from Jus Rol. Although these are not cinnamon rolls, rather they are more croissant like, they definitely filled a 'missing America' shaped hole in my heart/stomach!






These come in a tube, that is very easy to open. You then cut the roll into 6 and place on a baking tray. They take 11-14 minutes to cook, so not long to wait. The pack also comes with icing sugar. All you have to do is a little water.

The instructions state you should wait for them to cool to ice, however we were very impatient and iced and ate straight away. 





They were delicious served warm and I would definitely buy again. They would be perfect for breakfast and also save you lots of money, especially as a individual cinnamon swirl to buy individually is like a pound. Here you get 6 in a packet for under £2!

This tube cost me £1.50 from Waitrose, however it was on a promotion and is normally £2.

Rich Chille Con Carne with Spiced Butter

Yesterday my mum and I tried out Heston's chilli con carne with spiced butter, I loved it so much that I felt it deserved a blog post, and to be shared with everyone!

This has to be the most flavoursome chilli's I have ever eaten. The recipe may take ages to make and also some of the ingredients are pretty expensive (definitely save for a special occasion), however the outcome is amazing. The spiced butter really adds something to the flavour of the chilli and I have never tasted anything quite like it before. 

This would be an ideal dish to serve at a dinner party and I can assure you would wow guests, particularly with the flavour. I would serve a raspberry pavlova or lemon meringue roulade to follow as guests will want something light after the richness of the main course. 

If you are bored of the basic chilli con carne, fancy a challenge or are having a dinner party I thoroughly recommend that you try out this recipe.

(We tweaked the recipe slightly and only used 1 star anise, and one clove of garlic, we also used red chilli instead of green)
